I was extremely disappointed with my visit at Hybrid. My friend and I ordered two cocktails and a salmon crudo. We were served our cocktails and a single slice of Manchego cheese on a platter which we believed to be an appetizer or complementary snack. We later on understood that they had mistaken our order of salmon for that slice of Manchego. We tried to explain ourselves and were told « you have already finished your dish ». A woman that seemed to be the manager tried to explain me something in English which both me and my friend understood to be her offering to not put the cheese on the bill and get us the plate we initially had ordered. We then got our salmon plate. When the bill came I wanted to leave them a tip of the full amount of the Manchego cheese plate to thank them for being accommodating. Instead they had charged us for both plates. I would not have ordered the salmon if I had understood I would be charged for both plates. At this point I obviously was not going to argue and just wanted to pay and leave. Finally, they would also not accept card payment, which I know is common in Vietnam, but I don’t think should be the case for an establishment of this standing. After payment and as we were leaving, they tried offering shots that we declined. Cocktails were okay and salmon was disappointing at best. I will not be coming back.

I had an amazing experience at Hybrid Saigon. Tucked away on the third floor above Bar 57, this spot has a beautiful interior design that immediately stands out. The size and layout reminded me of a classic NYC-style cocktail bar. Hybrid presented as slightly dim lighting, intimate space, stylish, and thoughtfully arranged. In addition to the bar seating, there’s also a comfortable area that can accommodate a small group of around 4–6 people. The drinks here were exceptional. I started off with four of their milk punches, and each one was unique and delicious in its own way. Behind the bar, the team worked efficiently and with precision, even during a small rush. You could really appreciate the bartenders technique and attention to detail. What made the experience even better was the level of service. One of the staff members took the time to walk me through the cocktails and what to expect from each one. He was incredibly informative, and it was obvious he takes a lot of pride in his work. This was easily one of my favorite cocktail experiences in Saigon. I’m already looking forward to coming back on my next trip and will definitely be recommending this spot to friends and family.
